Sake Story

Sake is made from specially grown rice-Saka mai, mineral water , koji (mold) and yeast (kobo) by the hands of long term experienced sake masters. Many people, I may say elderly people who used to drink sake which was coarse flavored and very dry, which is considered as lower graded sake with high rice polished- rate often say, “ Sake.. oh, that’s too strong, isn’t it?” Once , however, after they taste the fist sip, “Oh, my! this is so smooth and tasty!”
‘This refers what is all about modern sake.’
Sake masters, who we call as,'Toji' in Japan have been striving for hundreds years to make a better quality sake. Many of them actually have involved in developing better saka mai and kobo. Some Toji wouldn’t even mind growing their own organic rice neither developing their own techniques to polish down saka mai for the finest quality sake. Like there’s no perfection of art, Brewing Sake itself is art.

Co-owner of Noboru restaurant.
Certified Sake Specialist-kikisakeshi.
Holds Sake Class by reservation basis and Sake Night for dine-in bi-monthly. Julie introduces sake to dine-in customers who need her advice to choose the right sake for them. Julie visits various sake breweries in Japan regularly.

Noboru Sake Class

Held by Reservation only. Class is known as very informative and fun for learning all about sake from sake history, sake ingredients and sake-making process to how to pare it with food.
Class includes 8 different grades of sake with some pupus. minimum 4 people up to 6 people at the sake bar. Larger group may be possible at dine-in area.
Good for celebrations-birthdays, parties, anniversaries, etc.

Held bi-monthly basis. Introducing selected sakes by Sake Specialists. Provides free samplings to all Dining-in Customers.

*Sake samplings are available for only those 21years or over.
